Add Everything To The Crockpot

Place the chicken thighs into the crockpot. If you are using boneless skinless chicken breasts you should cut them up into pieces. Then pour the sauce over the chicken in the crockpot and toss it together with the sauce. You want every surface of the chicken covered in the sauce. If there isn’t enough sauce you can add a bit of water to thin it out.

Cook The Chicken

After all the ingredients are in the slow cooker, you can start cooking the Thai chicken! Put the lid on the crockpot and turn the heat on low for 5 to 6 hours or high for 4 hours. Then you can just go about your day as the chicken cooks.

  1. Thicken the sauce: In a small bowl, mix 1-2 tablespoons of cornstarch with an equal amount of cold water until smooth. Stir the slurry into the sauce in the slow cooker during the last 15-20 minutes of cooking.
  2. Whisk the sauce well. Make sure to stir the sauce until the peanut butter and curry paste are fully incorporated. You really want the chicken to be saturated in all the flavors. 
  3. Don’t overcook the chicken. You can leave the chicken in the crock pot for hours to cook, but it’s still possible to overcook it, which will turn it into mush.
  4. Make it mild. If you want to make a milder version of this Thai chicken recipe you can omit the red pepper flakes and cut back on the amount of red curry paste used. 

Storage

  • 1 tablespoon sesame oil

  • In a small bowl mix the rest of the ingredients together. Whisk until sauce is smooth.

Hello Jo, made this for dinner last night. Wonderful dish! Easy to put together and makes a wonderful sauce. As you suggested, I thickened with a cornstarch slurry. Served with coconut rice. My husband raved about it!
P.S. I only had green curry paste on hand and it turned out great.

Wasn’t Jo Cooks best. We have made a ton of her recipes and yet this is the first one that was off target. Made is exactly as outlined and it had little flavor, heat or “thai” sense. Oh well.

Hi there! I’m really sorry to hear that this recipe didn’t hit the mark for you. I aim for every recipe to be a winner, so I appreciate your feedback. Thai cuisine can vary in its level of heat and complexity of flavors. Perhaps next time, you could try adding more spices, such as additional red curry paste, or some fish sauce for that extra ‘Thai’ kick. I seared the chicken before adding to the sauce in the crockpot. Then after cooking I removed it and reduced the sauce in a skillet, shredded the chicken back into the sauce and then scooped it all over fresh cut fries with cheese curds.
Makes a great Poutine

I made this today and it was delicious! Maybe my curry paste is a bit too spicy because it did turn out quite hot, but we’re Mexicans so we’re sort of used to hot 🙂

Hello Jo! I made this in the crock pot the other night and the chicken turned out great. Just wondering if you have a recommendations on how to make the sauce thicker? I followed the recipe but the sauce seemed a bit too ‘liquify’ and didn’t match the bold flavor of the chicken somehow. Thanks!

Hi Meredith! You can probably thicken it with a bit of cornstarch, make a slurry with a couple tsp of cornstarch and 2 tbsp of water then add it to the sauce.

Excellent recipe! I just made it in a skillet, but I will try it soon in the crock pot. Somehow I haven’t managed to get good results with the crock pot yet, so keeping my fingers crossed!

I probably wouldn’t cook chicken thighs longer than 6 hours on low. You can always give it a try for 8 and see how it turns out.

Made this exactly as written. Was glad I went back and read your comments about the color of the sauce before cooking. It looked like dirty dishwater! After cooking, it turned that luscious orange silky color. I used bone-in thighs because they were on sale and the meat literally fell off the bone. This recipe is a keeper!

That’s okay! If you want to crisp the skin up a bit after it’s done cooking you can pop the thighs under the broiler on high for a few minutes. Enjoy!
